CMT8, one of the latest challengers to enter the ring, is all about honouring Vietnamese street culture: from the food to the music to the ambiance.
Situated on a quiet street a stone's throw from the heart of Chinatown, CMT8 easily invokes the sights and scents of Saigon with stools set up on the sidewalk and grills charring proteins for your broken rice well into the night.
The concise menu features just two key players: banh mi and com tam (broken rice), but in so doing, hones them into charcoal-grilled, succulently seasoned perfection – or close to it, anyway.
Opening on Aug. 8 and earning a near-instant cult following, there's a good reason for CMT8's rapid ascent: it's the brainchild of Premium Banh, a popular Vietnamese eatery with locations in the Stockyards and Mississauga.
While Premium Banh serves up a diverse selection of Vietnamese snacks, ca phe, and desserts, the focus of CMT8 is keeping it simple and stripped-back, an approach that might just change the minds of anyone who subscribes to the "jack of all trades" school of thought.
