Adamson Bakery
Adamson Bakery sprung out of the space that already plays host to Adamson Barbecue and Conspiracy Pizza.
The concept began from the pitmaster’s attempts at dessert for the barbecue spot, slices of pie he slaved over to make in addition to tending the labour-intensive meats. That’s when baking wiz Danielle DeRoo came along.
All baking takes place in the same large, industrial space as barbecue cooking and pizza making. You’re welcome to take your sweet treats to go or eat them in the space, but be sure to pre-order online if you don’t want to take a chance on what you might be getting, because what’s available in the shop is subject to DeRoo’s daily whim.
Blueberry custard bars are part of a small range of squares ($3.75). They’re rich and soft, the fruit is super fresh tasting, and the base is crumbly while still providing a solid foundation.
There are also thick, dense salted caramel brownies and delicate but indulgent black forest cheesecake bars.
Cookies ($2) include a birthday cake variety with white chocolate chunks and funfetti sprinkles.
There are also white chocolate cranberry oatmeal cookies with orange zest, and some of the best double chocolate chips cookies I’ve ever had made with milk and dark chocolate chunks.
Chocolate and salted caramel is just one of several outstanding varieties of three-layer cakes ($34). The layers are a super rich, fudgy chocolate cake iced with chocolate mousse and topped with mini versions of DeRoo’s salted caramel brownies.
There’s also a chiffon birthday cake topped with mini versions of the funfetti cookies, decorated with cream cheese icing and sprinkles.
A lemon coconut crunch cake is unexpectedly sophisticated, coconut meringues layered with lemon mousse and topped with berries that set off this airy cake’s tartness.
Nine-inch pies ($24) include a zippy key lime that sticks to tradition.
A sweet potato pie brings it back to the barbecue, garnished with pumpkin seeds.
The apple crumble pie is made with three kinds of apples for contrast, Spartan, Granny Smith, and Gala, and topped with a cinnamon crumble and caramel drizzle.
Keep an eye on this operation, because they’re aiming to open a separate full bakery space and cafe. In the meantime, shop their full range of bakery offerings online and pick up in-store.
