Santa Madre

Santa Madre is a long-awaited spot bringing central Mexican cuisine to Toronto's east end.

Opened in May of 2026, this restaurant is the result of over a year of intermittent work.

Owner Luis Valenzuela, a chef instructor at George Brown College, explains that Santa Madre was scheduled to open several months ago. However, the soft opening was delayed by a series of unexpected setbacks.

santa madre torontoLuis credits his friends and family with helping him through this difficult time. Not only did they provide him with the emotional support he needed, but they also helped him renovate the restaurant.

Now, it's finally been unleashed onto Gerrard East.santa madre torontoSanta Madre takes inspiration from Mexican fondas, a type of family-run restaurant with minimal staff, often operated out of the family's kitchen or garage.

To help make Santa Madre feel authentic, Luis hired a small team and decorated the space to resemble a typical Mexican home. Wooden tables and colourful chairs are scattered throughout the room, surrounded by potted plants and hand-painted murals.santa madre torontoThe largest of these murals was painted by one of Luis's students and incorporates many symbols of Mexican culture, like calla lilies and alebrije-esque animals roving rolling hills.santa madre torontoA second, smaller painting can be found near the main entrance, amid a collection of black and white photographs.

The photographs depict Luis's family, while the painting depicts the Virgin of Guadalupe. Both of these decorations reflect the restaurant's name, which means "holy mother" in Spanish. santa madre torontoOverall, the dining room has a calm, cozy vibe, making it easy to think of Santa Madre as your own home. The lack of conventional restaurant features — such as servers and bartenders — only helps to strengthen the illusion.

Unlike most restaurants, Santa Madre's staff consists entirely of chefs. As such, food is ordered directly from the kitchen and payment is taken at the same time.santa madre torontoOnce the food is ready, the chefs will place it in the pick-up window and call out to the customer, who will then be able to customize their meals with an array of salsas and toppings.santa madre torontoTacos ($7) come with a variety of different fillings, including pescado (fish), carnitas (braised pork) and costillas (wild boar rib). Of the three, the tender carnitas was my favourite, especially paired with some spicy salsa verde.santa madre torontoElote asado ($15) is a popular Mexican street food, consisting of roasted corn topped with cheese, chili powder and garlic. Lime wedges are served on the side and can be used to enhance the dish's smoky flavour. santa madre torontoSopa de papa ($15) is a traditional Latin American soup, whose hearty flavour comes from a mixture of potatoes, poblano peppers and queso fresco.santa madre torontoGuacamole and totopos ($10) are served in an enormous bowl, with house tortilla chips along the sides and fresh guacamole in the middle. Diced tomatoes and onions are sprinkled on top.santa madre torontoTorta ahogada ($17) comes swimming in a pool of spicy tomato soup. Despite this, the sourdough bread remains perfectly crispy, while the carnitas are given a little extra kick.santa madre toronto

Coffee ($3.50) is served by the cup, but made in a clay pot. This unique method of preparation gives the drink a distinctive earthy flavour, which helps to balance out the bitterness of the coffee beans.

Luis recommends drinking it with hand-made Mexican chocolates ($10), whose rich flavour complements the coffee perfectly.
