As if earning a Michelin star for his sleek sushi restaurant wasn't enough, now Shoushin chef and owner Jackie Lin is taking a step into the world of noodles.
What do you do when you've already been established as one of Toronto's top chefs? For Chef Lin, apparently, cook something different.
Shoushin, situated in the city's affluent Yonge and Lawrence area, has long been considered one of Toronto's top sushi restaurants, earning consistent recognition in the Michelin Guide and ongoing praise from its diners since 2015.
Now, though, Lin is cooking up something entirely new: Osoba Ni-Hachi, a Yorkville soba restaurant where he'll serve up chewy, hand-made noodles inspired by those in the "soba capital of Japan," Yamagata.
"It's almost like a mission of mine to bring really healthy, delicious soba noodles into Toronto," Lin explains in a video announcing the restaurant.
After a trip to Yamagata, Lin goes on to explain that he was finally inspired enough by the city's soba culture to bring a piece of it back to Toronto. Alongside his partner in the venture, the restaurant will serve soba in two styles, both inspired by the noodle-mania of Yamagata.
Beyond that, though, we'll just have to wait and see what Osoba Ni-Hachi has in store.
