Ethica Coffee Roasters founder Greg based the roastery's idea on the philosophy explored in its namesake, Baruch Spinoza's Ethica. "Single-origin coffees highlight the unique characteristics of a place," Greg tells blogTO. "It signals that we are focused on showcasing the best coffees at their peak. Customers can explore different regions and flavours, almost like wine."

"We want to showcase the work of the farm or the producer, and not a mix of them," says Greg. "Imagine you had a painting you put a lot of time and effort into, but the buyer decided it would be better with another artist's work stapled to it, then presented as a joint piece. Just like our coffee, we would prefer to experience each piece on its own."
