Byzantium bills itself as the grand matriarch of the gay village and backs it up with a massive menu of martinis ranging from the Jean Harlow (vodka, jagermeister, peach schnapps and cranberry juice) to the James Dean (vodka, cointreau, brewed green tea, fresh grated ginger, simple syrup). There's also plenty of food like streak frites and regular events like the Absolute Sultry Saturdays.
