Pasta Privato

Pasta Privato might just be Toronto's next best-kept secret. Hidden inside Notte Ristorante, the 30-seat space offers an intimate dining experience built around hand-folded pasta, seasonal dishes, and modern Italian cooking.

For serial restaurateur Chef Michael Angeloni, whose projects include Notte, The Berczy, and Restaurant Lucie, it's his most personal project to date.

"The inspiration was to create a restaurant where I could explore the culinary diversity of Italy. Most people have a very specific, limited idea of what 'Italian food' is, but the reality is incredibly vast," Chef Angeloni tells blogTO.

"Compared to my other ventures, Pasta Privato is more experimental and intimate — it's where we get to be truly creative without the constraints of a traditional high-volume menu."

Pasta Privato TorontoA place where regional Italian cooking goes beyond the usual expectations, the menu is designed to change with the seasons and the curiosity of the kitchen. Diners can choose an 8-course tasting menu ($125) or order à la carte. ​No matter the format, each dish begins the same, with good ingredients, careful technique, and a story worth sharing.

Pasta Privato TorontoThe Chicken Liver Bigné ($17) adds something savoury to the typically sweet pastry. In lieu of the traditional custard, this bigné is filled with a rich liver mousse that has been part of Chef Angeloni's repertoire for years. Playful and unexpected, it also features Italian brandy, rosemary, and aged white balsamic.
Pasta Privato TorontoA signature on the tasting menu, the Beef Heart receives a house marinade before being grilled over eucalyptus coal on a rosemary skewer. It's accompanied by an earthy heirloom beet relish.

​"This is a nod to my time at The Black Hoof working with Grant van Gameren. Our Peruvian sous chef there introduced me to anticuchos (Peruvian street food), and that memory of bold, charred flavours stayed with me," says Angeloni.

Pasta Privato TorontoBest described as a love letter to Sardinia, the Lorighittas ($37) taste like warm sun and the Mediterranean Sea. A bowl of glossy golden ringlets, this hand-braided pasta is tossed with spring island mussels, clams, squid, preserved lemon, spicy 'nduja, and black garlic. Plus, fresh Peruvian mint and miniature croutons to finish.

Served al dente, with a concentrated seafood flavour that runs through every bite, it's a memorable plate that feels worthy of the price tag.

Pasta Privato TorontoCommonly known as the wagyu of pork, the Grilled Ibérico Pork Presa ($48) features a dehydrated black olive rub, fennel purée, and a sour cherry and fennel jus. Vibrant and tart, it's garnished with sorrel leaves.

"When you have an ingredient that beautiful, the goal is to stay out of its way," explains Angeloni. "We keep it simple, pairing it with Ontario sour cherries we preserved last summer to cut through the richness."

Pasta Privato Toronto​Pictured here is a Warm Almond Cake ($16), made to order. Tender with caramelized notes of brown butter, it balances savoury and sweet with honey-mascarpone, fried rosemary, and orange crème anglaise poured tableside.

For drinks, there's an expertly curated wine list alongside a selection of signature cocktails, perfect for a pre-dinner aperitivo or post-dinner nightcap.

"I want the experience to feel thoughtful but never stuffy. Above all, it has to be delicious," says Angeloni. "We're aiming for that sweet spot where a guest feels like they are discovering something new and interesting, but with the warmth and soul of a neighbourhood favourite."
