Northwestern Chinese Cuisine
Northwestern Chinese Cuisine is all about potato noodles. These noodles are starchy, thick and chewy compared to vermicelli, and are served in a pork bone-marrow broth with a variety of toppings.
Each bowl is prepared over a fire stove where the food is cooked in a clay pot, allowing it to remain hot for a long period of time even after serving.
