A newly-opened fine dining restaurant in Ontario might just be the province's next big breakout star.
With temperatures clawing their way above zero for the first time in 2026 over the February long weekend, road trip season feels like it's within reach once again.
For the foodies among us, there are few areas of the province more desirable for a short day or weekend trip than Niagara-on-the-Lake (NOTL). Home to some of the country's top wineries and standout restaurants, to say nothing of its dazzling views, year after year, NOTL is a tried-and-true adventure just a short drive out of the city.
When planning your culinary itinerary for your upcoming visits to the Niagara Region, big names like the two Michelin-starred Restaurant Pearl Morrissette, Michelin-recommended Trius Winery, or St. Catharines' Fat Rabbit inevitably top the list, but there's a new kid on the block who is well worth amending your plans for.
Situated in an unassuming commercial plot (its closest neighbour is a Subway location) in NOTL's historic Old Town, Revé is a testament to the fact that fine dining and earnestness can go hand-in-hand, and, often, are better off for it.
The brainchild of two young couples — Nicole Pisarenko, Chef Adriano Cappuzzello, Anna Kruusi and Kevin Gillingham — Revé represents the culmination of four long-held dreams, to which the restaurant's name (meaning "dream" in French) refers.
But this is no far-fetched dream. Rather, it's one the team has worked towards (albeit separately, before their respective paths led to one another) for years, and the end result is proof that time spent dreaming isn't time spent in vain.
The heart of the restaurant is a live wood fire in the open kitchen, which touches each and every dish that appears on your plate. Sit at the chef's table, and you'll watch it be regularly fed and adjusted while various elements of your meal — everything from cuts of venison to ginger root — get their time to shine in the fragrant heat.
The dining room beyond the chef's table is equally intimate: chairs are set up with a view of the kitchen, while a moss installation hangs on the ceiling. All rich velvets and earth tones, everything about Revé feels set up to make you feel instantly at ease.
Chef Adriano Cappuzzello's menus, which rotate seasonally, have the same effect.
Born and trained in Sicily, before working at scores of celebrated Ontario restaurants, including Langdon Hall, La Palma and Sofia, each course of Cappuzzello's menu is a specific snapshot of his life, from the cookies his Nonna served him growing up to his first time meeting his Eastern European father-in-law, and being served smoked fish for breakfast.
Although the restaurant isn't exclusively Italian and borrows from cuisines around the world, Cappuzzello's Sicilian background finds its way into many a dish.
For example, one plate, inspired by the view from the window of his childhood home in Sicily, sees two spaghetti spirals perched vertically (meant to resemble the hay bales that sat in the field), sandwiching a raw crab mousse, which, in conjunction with a seafood demiglace, paints a particularly visceral picture of the oceanic air blowing in from the nearby Mediterranean.
Staying true to the restaurant's mission of telling the stories of Sicily and Niagara, a large majority of Revé's ingredients are sourced from the nearby Always June Organic Farm, and, in the case of anything that can't be sourced locally, they come from Sicily directly.
The full ten-course tasting menu at the chef's counter doesn't come for free, though: it'll run you a pretty $275 per person, with an additional $145 for wine pairings, which, just like the ingredients themselves, come exclusively from either Niagara or Sicily.
It'll be well worth the price, though. A meal at Revé brings with it a humility that's hard to find in fine dining. While the hospitality is exceptional, it's also genuine.
Seated at the chef's counter, you have the opportunity not only to hear Chef Cappuzzello's explanations of the dishes but, in so doing, also to piece together the story of how Revé came to be.
It hits at something truly special that, beyond technically impressive courses and the hypnotic undulations of the wood fire, makes it as one-of-a-kind as a person's own dreams.
