ABURI SUSHI at Waterworks with Chef Ryotaro Matsuzaki
ABURI SUSHI at Waterworks Food Hall is reviving its monthly hotpot series for a single evening on Tuesday, October 21, and this instalment is all about peak season matsutake and buttery wagyu. Chef Ryotaro Matsuzaki leads a nine-course shabu shabu tasting with seatings at 6 pm and 8 pm. Tickets are $125 per guest plus tax and gratuity, with an optional A5 Miyazaki wagyu upgrade. The format is classic shabu shabu with a polished Aburi touch. Diners start with delicate bites and sashimi, move to a fragrant tableside hotpot centred on matsutake and wagyu, then finish with refined temaki and a clean dessert. It is comfort and craft in equal measure, with premium product and precise execution.
