These fluffy souffle pancake sandwiches are taking over Toronto right now

There's a new visually stunning (and just as tasty) dessert taking over Toronto right now — and I mean that literally. Despite only opening a month ago, it's already opened two locations in the city.

If you keep up with the latest viral food trends around Toronto, chances are one of your feeds has been graced with the heavenly sight of fluffy, cream-filled soufflé pancake sandwiches.

Somewhere between a cupcake, an ice cream sandwich and a cloud, these sweet treats are unavoidable right now, and the bakery behind them is making major headway when it comes to its Toronto takeover.

While Japanese-style fluffy pancakes are already veterans on the viral food scene, the notion of filling them with flavoured whipped cream and topping them with various fruits and other confections is novel in Toronto.

Matcha, mango and even jasmine green grape (complete with a gemlike embellishment of grape halves) are all among the standouts that are getting attention online, and having a wide variety of flavours is, as it happens, an intrinsic part of their business model.

The team behind 6Cloud tells blogTO that the inspiration behind the bakery and its slogan comes from the belief that desserts can be more than something you only eat when you're happy.

"We wanted to create a space where desserts can match different moods — whether you're feeling calm, tired, nostalgic, or simply craving something comforting," they say.

Their motto, "Taste of mood in every bite," albeit a little clunky, is meant to embody that same spirit, the notion that there's a light-as-air pancake sandwich ready to complement any mood that overcomes you.

Opening the doors of their first Yonge and Lawrence location in mid-November and a second location in North York just weeks later, 6Cloud's success has been instantaneous, with images of the desserts flooding social media feeds days after opening.

The team tells blogTO that they're "truly grateful" for all the success the business has already found.

"What's been most meaningful is hearing how people describe the experience—not just that it tastes good, but that it feels comforting or calming. It shows us that people understand the idea behind 6Cloud: desserts that can be enjoyed in many moods, not just during happy moments," they explain.

While the two locations are the only ones currently in business, the 6Cloud team tells blogTO that it hopes to expand further in the new year.

"Looking ahead, we hope to bring this experience to even more people downtown next year — especially those who are curious, craving something comforting, or simply looking to try something new," they say.

6Cloud currently has locations at Yonge and Lawrence (3236 Yonge St.) and in North York (10 Northtown Way).
