There are a few steadfast rules of Toronto dining. First off, reputation is everything — just ask Pusateri's. The fable of the scorned, expectorating server may be an exaggerated one, but should be taken seriously nonetheless, and the value of the open kitchen should never be underestimated. Despite the measures taken by the scrupulous city diner, those on the outside can never really know what goes on in the kitchen. And as someone who has spent a summer or two working in the restaurant industry, I know.

For those not privy to the inner workings of their favourite spots, there's Toronto Public Health carrying on regular investigations. In most cases I'd say ignorance is bliss, but DineSafe findings are certainly the exceptions. So brace yourself for bad news about your choice Toronto spot, here are some notable yellow cards (and one red) handed out this week.
